What would you get if a More Traditional Frittata had a baby with a Sweet Banana Pancake? A Banana Frittata! A healthy breakfast option with a punch of protein.
1 1/2 cups milk
4 ripe bananas
2 teaspoons cinnamon
3 teaspoons vanilla
Preheat oven to 350 degrees.
Spray 12″ cast iron pan with oil.
Whisk all ingredients except the maple syrup.
Pour into pan.
Bake 30 minutes.
Let sit for 10 minutes before serving.
Top with maple syrup.
